Ingredients

4 cups Zuchinni sliced 1/8 thick

2 cups chopped onion

1 egg

8 oz shredded mozzarella

4 tbsp chopped parsley

2 tsp chopped basil

2 tsp chopped oregeno

1/2 tsp salt

1/4 tsp pepper

1/2 pound butter

1 tsp dijon mustard

1 pie crust

Preparation

Preheat oven to 350 place dough in 8 inch pie pan spread mustard evenly over dough in a seperate bowl mix the egg and mozzarella.

in a frying pan , melt butter, add onion zuchinni and spices and saute until tender ( about 10 minutes)

remove from heat and let cool for 15 minutes

combine with egg and chees and pour into pie shell.

bake at 350 for 20-30 minutes until knife inseted in center is dry.
