Ingredients

2cups grated zucchini

1cup greek yogurt

2 cups oats

pinch of sea salt

1 tsp baking soda

1 1/2 tsp baking powder

2 tsp cinnamin

1/4 cup melted coconut oil

2 tsp vanilla

2 eggs

1/4 cup dried currants or raisins

optional slivers of almonds on top

Preparation

Skin and slice a medium zucchini; chop in food processor (about 2 cups) Add all other ingredients Blend until smooth (you may add some or all currants by hand stirring if you don’t want them blended in) Pour into muffin cups or well greased (coconut oil) loaf pan or mini loaf pans Optional add almonds to top

Bake at 400 degrees appox. 25 min. - until toothpick or knife comes out of center dry (do not overcoook)
