Ingredients

6 medium size zuccinni

3 large onions

1 + 1/2 cup flour

1/2 cup vegetable oil

3 large eggs

salt and pepper to taste

Preparation

  1. Peel and grate the zuccinni, squeeze as much water out of the grated zuccinni, reserve 1/2 of the squeezed water.

  2. Chop onions very fine.

  3. mix grated zuccini and chopped onions with the rest of the ingredients.

  4. Pour into prepared pan.

  5. Bake in preheated oven for 40-50 minutes, or until golden brown on top.
