Ingredients
3 eggs
1 c vegetable oil
2 c sugar
2 c grated zucchini
2 tspn vanilla extract
3 c flour
4 tspn cinnamon
1 tspn baking powder
Preparation
Preheat oven to 325. Grease and flour two 8x4 in loaf pans
In bowl, beat eggs until light and fluffy. Mix in oil and sugar. Stir in zucchini and vanilla. Add dry ingredients into egg misture. Divide batter into prepared pans. Bake 65 minutes or until done.
