Ingredients
1/2 cup olive oil
2 cups finely chopped spanish onion
1 lb potatoes peeled and cut into 1 inch dice
3 lbs zucchini, washed, trimeed, and cut into 1/2 inch dice
mint leaves
basil leaves
half bunch italian parsley

add oil and saute onions for 5 mins add potatoes and season add enough water to cover potatoes and onions simmer for 10 mins add zucchini for 5 mins remove from heat and add herbs puree using immersion blender - add olive oil if to thick
