Ingredients
2 cups grated zucchini
1 cup orzo pasta
2 white onions, diced
4 Tbl olive oil
1.5 qrts chicken stock
(can sub veggie stock)
salt
pepper
Sour cream for garnish
Preparation
Saute onions in olive oil until soft. Add chicken stock and zucchini. Bring to a boil and add pasta. Boil for about 10 minutes. Salt and pepper to taste and garnish with sour cream. This makes a bunch of soup so may need to half recipe or freeze leftovers.
