Ingredients
4 medium zucchini
2 red bell peppers
1/2 c champaign vinegar
2 tbl. olive oil
1 clove garlic
salt and pepper
Preparation
Thinly slice zucchini and peppers with mandolin style slicer. Toss with vinegar, olive oil (less is more, as this is a pickled type salad), one clove minced garlic, salt and pepper to taste. Marinate a couple of hours, turning occasionally.
