Ingredients

1 1/2 pounds zucchini

1/2 cup chopped onion

1 cup dry rice, cooked

2 cups grated cheddar cheese

1/2 teaspoon pepper

1/2 teaspoon salt

3 eggs

1/2 cup mayonnaise

1/2 cup breadcrumbs

1/4 cup sliced almonds

Preparation

Slice zucchini with skin on. Add onion. Steam together until zucchini is tender. Drain well.

Stir in cooked rice and cheese.

In a separate bowl, beat eggs, mayonnaise, salt and pepper. Blend into rice mixture.

Put into greased casserole dish (2 quart). Top with bread crumbs and almonds.

Bake 30 minutes at 350 degrees.
