Ingredients
1/2 c. diced fresh tomatoes
1/2 c. matchstick carrots
1/3 c. sliced green onions
1/4 c. Italian dressing
1 T. basil pesto
1/4 c. crumbled blue cheese
2 medium zucchini
Preparation
Combine tomatoes, carrots, onions, dressing, pesto, blue cheese in salad bowl. Cut zucchini into 3 to 4 inch long sections. Cut the zucchini into thin lengthwise strips using a vegetable peeler. Add zucchini to the salad bowl. Toss to coat. Chill until ready to serve.
