Ingredients
2 tsp olive oil
1 medium zucchini(grated)
1 medium onion (grated)
1 can stewed tomatoes (can use Italian stewed)
salt and pepper to taste
1/2 cup parmesan (shredded)
1/2 cup bread crumbs mixed with 1-2 Tbls. melted butter or margarine
Preparation
In medium skillet with an oven-proof handle, saute grated zucchini and onions in olive oil until soft. ( I usually grate or shred the zucchini and onion directly into the pan using a hand grater). Add a can of stewed tomatoes, stir and cook on low for about 10 mins. Sprinkle parmesan cheese evenly on top. Sprinkle bread crumbs that have been mixed with melted butter evenly over the parmesan. Put pan with contents under the oven broiler until the cheese bubbles and crumbs brown slightly. Serve directly to table
