Ingredients

4 tbsp extra virgin olive Oil

1 kg zuccini - grated on courest side of greater)

1/2 tsp flakey salt

1/8 tsp freshly ground black pepper

1 tblsp sliced mint leaves

1 tsp chopped dill

Preparation

Place oil in a large, wide bottomed saucepan with high sides and place over a medium heat. When oil is hot, add zucchini, reduce heat to low and cook stirring from time to time for 30 mins or till juices have evaporated.. Add salt, pepper, mint and dill. Serve in a bowl eaither warm or cold to accompany BBQd flat bread.
