Ingredients

4 med. zucchini

1 lbs. bulk pork sausage

1 can 16 oz. tomatoes

1 can 6 oz. tomato paste

2 T minced parsley

2 T minced onion

1 clove minced garlic

1/2 t salt

1/2 t oregano

1 1/2 - 2 C mozzarella cheese

1/2 C parmesan cheese

Preparation

Brown sausage in skillet and drain well.

Combine sausage, tomatoes, tomato paste, parsley, and seasonings in skillet.

Cover and simmer 15 min (Stir intermittently).

Add sliced zucchini, cover and simmer 15 min. more.

Add 1/2 parmesan and mozzarella.

Transfer to a greased baking dish.

Sprinkle remaining parmesan and mozzarella on top.

Bake uncovered for 30 min. at 350 degrees.

May freeze before baking if you wish.
