Ingredients
2 medium zucchini (grated)
2 eggs (beaten)
1 c all purpose flour
1 tsp baking powder
1 tsp salt
1/4 tsp pepper
1 clove garlic (minced)
2 tbsp Italian parsley (chopped)
1/4 c. to 1/2 c. grated Parmesan cheese
olive oil (for cooking)
2 tbsp butter (for cooking)
Preparation
- Grate zucchini (squeeze out water)
- Whisk eggs, flour, baking powder, salt and pepper together
- Add in garlic, parsley and zucchini. Mix until all ingredients are blended together. If too thick, add a little milk so as to have the batter somewhat runny.
- Heat butter and oil together in large skillet over medium high heat
- Drop in spoonfuls of batter, cook until browned and flip
