Ingredients

One medium or 2 small zucchinis grated.

one egg, beaten.

4 ounces shredded parmesan cheese.

one tablespoon polenta or corn meal.

1/4 cup bread crumbs.

pinch of salt.

one tablespoon butter or olive oil or combo.

1-2 tablespoons soy sauce.

Preparation

Mix grated zucchini, beaten egg, shredded parmesan cheese, polenta, bread crumbs and salt. Mixture should hold together loosely. Melt butter or oil in large non-stick pan on medium heat. Add zucchini mixture and cook until edges are brown. Flip over for a few minutes to brown other side. Serve with a splash of soy sauce for an interesting flavor depth.
