Ingredients

1 T. canola oil

4 small zucchini, cut lengthwise into quarters

2 T. dried Italian seasoning

1/2 t. salt

1/2 t. ground black pepper

Preparation

In a large skillet, heat oil over meduim-high heat. Add zucchini, and saute for 4 minutes, or until softened and lightly browned. Sprinkle with Italian seasoning , salt, and pepper, and cook 1 minutle longer.
