2Tsofbutter 1/2lbzucchini cut 1/8slices 1redonion chopped 1tschopped freshtarragon 1/2csun-driedtomatoeschopped 2garliccloves chopped 6eggs 1/2cParmigiano-Reggiano cheese salt&pepper

Preparation

in a 10in. pan melt 1Ts butter add zucchini,oonion,tarragon toss to coat with butter for 5min.add sun-dired tomatoes,garlic,cookfor 1min.remove from heat In bowl whisk eggs stir in zucchini mixture,cheese salt,pepper melt 1Tsbutter in pan over medium heat pour egg mixture ,reduce heat to low cook till eggs are set about 10min. flip a plate over pan an flip over slide Frittata back into pan and cook till bottom is brown about 5min.
