Ingredients
5 medium zucchinis, thinly sliced
3 cloves garlic
4 tbs parsley
1/4 tsp thyme
1/2 chopped onion
salt and pepper to taste
3 tbs grated Parmesan cheese
4 eggs
Preparation
- Saute onion, garlic and zucchini in 12" frying pan, salt and pepper to taste.
- Beat eggs and cheese together
- Drain zucchini and add to egg mixture
- Cook in 10" frying pan until nearly cooked.
- Turn out onto plate and slide back into pan, cook until done.
