Ingredients
3 Eggs
2 C Whole Wheat Flour
1 C Dark Brown Sugar
1 C Sugar Substitute
1 C Melted Coconut Oil
1 Tbsp Vanilla
1/2 C Yogurt
1 Tbsp Cinnamon
1 Tsp Salt
2 Tsp Soda
1/4 Tsp Brown Sugar/Honey
3 1/2 C Grated Zucchini
1 C Nuts (Optional)
3/4 C Unsweetened Shaved Coconut
3/4 C Very Dark Chocolate Chips
Preparation
Preheat over to 350
Beat eggs Add: Dark Brown Sugar, Sugar Substitute, Coconut Oil, Vanilla and Yogurt
Stir in Flour, Cinnamon, soda, salt, brown sugar/honey, zucchini, nuts, coconut, chocolate chips
Bake 1 hr. (Check often after 35 mins)
