Ingredients
1 zucchini (approx. 400 g.), Washed, unpeeled, sliced lengthwise, very thin
1 1/2 tbsp olive oil
60 grams. Pecorino cheese , grated
30 grams. Panko (coarse breadcrumbs)
3 sprigs of thyme, chopped
1 c / s fresh parsley, chopped
Salt and pepper
Preparation
Arrange the zucchini in a tray and paint with oil on both sides.
Batter in a bag with the mixture of pecorino, Panko, thyme, salt and pepper, should be well soaked.
Put the slices in one layer on a tray lined with Silpat or parchment paper and bake at 200 degrees for 20 minutes (should be crisp but not burned). Sprinkle with parsley and serve immediately.
