Ingredients
3 C Zucchini cut into bite sized peices
2 Carrots grated
1 small onion finely chopped
1 Can Cream of Chicken Soup
1/2 C Sour Cream
1/2 bag package of seasoned stuffing mix ~ 3 cups
1/3 C Melted Butter
Preparation
Place cut zucchini and grated carrots in large microwaveable bowl. Cook high 5 mins in the microwave, do not add water. Stir once mid way of cooking. In a 9X13 glass baking pan I melt the butter, mix in the sour cream, and soup, remove and hold asside 1/4 of this dressing. Mix all other ingredients with 3/4 of the dressing, top with the 1/4 remaining dressing and bake in a 350 degree oven for 25 mins
