Ingredients

3 medium zucchini, washed & sliced 1/4" thick

1/4 cup bread crumbs

1/2 onion, chopped

1/4 cup melted butter or margarine

2 eggs

1 teaspoon salt

1 tablespoon sugar

dash pepper

Preparation

Preheat oven to 375. Grease casserole dish.

Boil zucchini in salted water for 10 minutes (or until tender). Drain in colander. Mash with fork, drain all liquid and combine with remaining ingredients. Pour into greased casserole. Cover with additional bread crumbs. Cover and bake for 45 minutes.
