Ingredients

ZUCCHINI CAKE:

3 eggs

1 cup oil (vegetable)

2 cups sugar

2 cups grated zucchini

2 teaspoons vanilla

3 cups flour

1 teaspoon salt

1/4 teaspoon baking powder

1 teaspoon baking soda

3/4 teaspoon nutmeg

3 teaspoons cinnamon

1 small can crushed pineapple

1 1/2 cups raisins

1 cup nuts, chopped (optional)

CREAM CHEESE FROSTING:

8 ounces soft cream cheese

1 box 10X powdered sugar

1 stick butter, softened

1/2 teaspoon vanilla

Preparation

Cream eggs, oil, sugar, zucchini & vanilla. In a separate bowl sift: flour, salt, baking soda & powder, nutmeg and cinnamon. Combine with creamed mixture. Then add pineapple, raisins & optionally nuts. Grease and flour tube pan. Bake for 1 hour at 325. Allow to cool. Mix frosting ingredients together. Frost cake.
