Ingredients
3 eggs
2 cups sugar
1 cup oil
1 tablespoon vanilla
2 1/2 cups flour
1/4 teaspoon baking powder
1 teaspoon salt
1 teaspoon baking soda
2 teaspoons cinnamon
1 teaspoon nutmeg
2 cups grated zucchini (about 2 medium zucchini)
Preparation
Preheat oven to 350 and grease and flour 2 loaf pans.
Beat eggs, add in sugar, oil, and vanilla, mixing until combined. In a seperate bowl, mix together remaining dry ingredients. Add dry ingredients into the moist in three batches, mixing well between additions. Add zucchini, and mix until combined. Pour into loaf pans and bake for 1 hour, or until toothpick comes out clean. Cool for about 10 minutes in pan, then remove from pans and cool completely on rack.
