Ingredients
3 1/4c flour
2 3/4c sugar
1 1/2c grated zucchini
1/2c grated green apple
1/4c sweetened coconut
1/4c chopped walnuts
1 1/2 teaspoons salt
1 teaspoon ground nutmeg
2 teaspoons baking soda
1 teaspoon ground cinnamon
1c vegetable oil
4 beaten eggs
1/3c water
1tsp lemon juice
Preparation
In one bowl combine flour, salt, nutmeg, baking soda, cinnamon and sugar, zucchini, and coconut. In a separate bowl, combine oil, eggs, water, apple, and lemon juice. Mix wet ingredients into dry, add walnuts and fold in.
Bake at 350degrees for about an hour. It will get a lovely deep brown caramelization to the crust.
