Ingredients
2 c raw, unpeeled zuccini, shredded
2 c sugar
3/4 c veg oil
2 1/4 c flour
2 tsp baking soda
3 eggs
2 tsp vanilla
1/4 tsp salt
3 tsp cinnamon
1 c chopped walnuts
Preparation
Mix eggs, sugar and oil. Stir in zucchini. Mix dry ingredients. Set aside 1/2 c and add nuts. Add dry ingr to zuc mixture. Add vanilla. Gradually stir in remaining dry ingr and nuts. Pour into 2 greased and floured loaf pans. Bake 50-60 min at 325.
