Ingredients

2 cups shredded raw zucchini

3 eggs

1 3/4 cups sugar

1 cup veg. oil

1 1/4 cup AP flour, 3/4 cup whole wheat flour

1 1/2 teaspoon baking powder

1 teaspoon baking soda

2 teaspoons cinnamon

1/2 teaspoon nutmeg

3/4 teaspoon salt

1 1/2 teaspoon vanilla

1 cup chopped walnuts

1 cup cranberries plumped in the juice of 1 orange

Preparation

Beat eggs, sugar and oil till sugar is dissolved. Add vanilla and salt and beat some more. In separate bowl mix dry ingredients then add to egg, sugar oil and beat till well mixed. Fold in zucchini, nuts and cranberries. Divide in two full sized loaf pans that have been greased. Put in 350 deg. oven with fan on. Check in 45 minutes but usually takes 50 min.
