Ingredients

3 eggs (or egg substitute)

1 cup oil

1-2 cups sugar

2 peeled & grated zucchini

2 tsp. vanilla

3 cups flour

1 tsp. baking soda

1/4 tsp. baking powder

1 tsp. salt

3 tsp.cinnamon

1/2 cup chopped walnuts (or other nut)

Preparation

Beat eggs (or egg substitute) until light and foamy. Add oil, sugar, zucchini, and vanilla. Mix lightly but well. Mix flour, soda, baking powder, salt, and cinnamon in a separate bowl. Add flour mixture to liquids and blend. Add nuts. Bake in two 9 x 5 loaf pans at 325 degrees 1 hour or until tests done. Remove pans at once & let cool (on rack if applicable).
