Ingredients

4 cups coursley shredded zucchini

3 cups flour

2 1/2 cups sugar

1 1/2 cups veg oil

4 eggs beaten

1 tbs 1 tsp vanilla

1 tbs cinnamon

1 1/2 tsp salt

1/2 tsp baking powder

1 1/2 tsp baking soda

walnuts (optional)

Preparation

grease bottom of 2 loaf pans blend all ingredients in a large mixing bowl with an electric mixer(this works better if you start with the dry and add in the wet). Pour the mixture into the pans. Bake at 350 degrees for 50 mins - an hour cool for 10 mins and remove from pan before sticking
