Ingredients

Bread

1 cup all-purpose flour

2 cups whole wheat flour

1 teaspoon salt

1 teaspoon baking soda

1 teaspoon baking powder

4 teaspoons ground cinnamon

2 egg whites

1 cup apple sauce

2 cups white sugar

3 teaspoons vanilla extract

3 cups grated zucchini

2 bananas

1 cup chopped walnuts

Topping

1/2 cup rolled oats

1/2 cup brown sugar

1/4 cup whole wheat flour

1 t cinnamon

1/4 cup butter

Preparation

1.Grease and flour two 8 x 4 inch pans. Preheat oven to 325 degrees F (165 degrees C).

2.Sift flour, salt, baking powder, soda, and cinnamon together in a bowl.

3.Beat egg whites,apple sauce, bananas, vanilla, and sugar together in a large bowl. Stir in zucchini and nuts until well combined. Add sifted ingredients to the creamed mixture,and beat well. Pour batter into prepared pans.

4.Bake for 15 to 20 minutes, sprinkle topping mix over top. Continue baking for a total of 50 to 70 minutes, or until tester inserted in the center comes out clean. Cool in pan on rack for 20 minutes. Remove bread from pan, and completely cool.
