Ingredients
large zucchini
red onion
fresh basil
tomato slices
butter or margarine
garlic salt
salt and pepper to taste
olive oil
parmesan cheese, fresh grated is best
Preparation
Cut zucchini in half lengthwise. Scoop out big seeds and spread with butter or margarine. Salt and pepper to taste. Slice red onion very thin and place on zucchini, add basil, and tomato slices. Sprinkle with olive oil and garlic salt. Top with parmesan cheese. Wrap in foil and place on baking sheet. Bake at 350o until tender, or about 45-60 minutes,depending on size of zucchini.
