Ingredients
2 -3 zucchini
10 - 12 plum tomatoes
Olive Oil
Basil
Salt & Pepper
Pasta (fusilli, bow ties, rotini) or any short pasta.
2 cloves garlic
balsamic vinegar
oregano
olives - optional
artichoke hearts - optional
diced mozzarella - optional
Preparation
In a large bowl place the following and marinate over night:
10 -12 plum tomatoes (2 lbs) - diced 2 -3 zucchini - washed, peeled & diced into very small pieces salt & pepper to taste Basil leaves Olive oil to cover
After marinating for several hours preferably over night add:
2 cloves minced garlic balsamic vinegar to taste a pinch of oregano crushed into fine powder
Boil pasta eg. Rotini tri color or regular bow ties or any short pasta Do not over cook as pasta will absorb mixture and grow.
Drain pasta and cool thoroughly.
Toss well drained pasta with a little olive oil, coat well before adding to tomato/zucchini mixture.
Refrigerate serve cold or at room temperature garnished with basil leaves.
Optional, diced mozzarella, sliced olives, artichoke hearts etc.
