Ingredients

Two large zucchini squash, cut into 1" thick coins

8 ounces whole wheat ziti

2 cups bread crumbs

1 egg (or egg substitute)

1/4 cup milk (or soy or rice milk)

1 16 ounce jar of spaghetti sauce

Freshly grated parmesan cheese

Preparation

Prepare pasta according to package directions; set aside. Simmer sauce over low heat, in covered pan. Heat oven to 400 degrees. Spray a large cookie sheet with cooking spray. Beat egg in a small bowl, and add milk. Stir. Pour bread crumbs into zipper bag. Dip zucchini slices into milk/egg mixture. Then place two or three slices into the zipper bag and shake until fully coated. Set slices on sprayed cookie sheet. Bake for 8 minutes, then turn over and bake for another 8 minutes. Put ziti into individual bowls, and top with several slices of the breaded zucchini. Add sauce and parmesan cheese to taste.
