Ingredients

one onion, chopped

three lg clove of garlic, minced

3 TBSP Olive oil

splash rice vinegar

1 lemon

crushed red pepper flakes

italian seasoning spice mix

1 lb box of ziti or other pasta

1 lb of frozen or pre cooked shrimp

1 box frozen chopped spinach (partially defrosted)

1/2 cup grated parmesan cheese

Preparation

  1. prepare pasta according to directions on box, al dente please
  2. defrost frozen shrimp in cold water. Add to boiling pasta for the last minute of cooking to warm up shrimp.
  3. sautee chopped onion till translucent, add garlic, red pepper, seasonings.
  4. add box of frozen chopped spinach, cover & cook till spinach is completely cooked & toss the whole thing together to blend ingredients. Add a splash of rice vinegar to zip up the flavor.
  5. Place one serving of freshly cooked ziti and shrimp to bowls. Put a few large tablespoonfulls over the pasta and toss gently
  6. Squeeze a lemon over the pasta, to taste.
  7. Sprinkle freshly grated parmesan cheese to taste.
  8. Serve immediately, bon appetito.
