Ingredients
one onion, chopped
three lg clove of garlic, minced
3 TBSP Olive oil
splash rice vinegar
1 lemon
crushed red pepper flakes
italian seasoning spice mix
1 lb box of ziti or other pasta
1 lb of frozen or pre cooked shrimp
1 box frozen chopped spinach (partially defrosted)
1/2 cup grated parmesan cheese
Preparation
- prepare pasta according to directions on box, al dente please
- defrost frozen shrimp in cold water. Add to boiling pasta for the last minute of cooking to warm up shrimp.
- sautee chopped onion till translucent, add garlic, red pepper, seasonings.
- add box of frozen chopped spinach, cover & cook till spinach is completely cooked & toss the whole thing together to blend ingredients. Add a splash of rice vinegar to zip up the flavor.
- Place one serving of freshly cooked ziti and shrimp to bowls. Put a few large tablespoonfulls over the pasta and toss gently
- Squeeze a lemon over the pasta, to taste.
- Sprinkle freshly grated parmesan cheese to taste.
- Serve immediately, bon appetito.
