Ingredients
Bowl #1
1# ricotta
3 eggs
1 tsp. vanilla
1 c. milk
Bowl #2
3 c. flour
1/3 c. sugar
1 TB + 1 tsp. baking powder
1 tsp. cinnamon
pinch nutmeg
pinch salt
Deep fryer at 350 degrees
Powdered sugar
Preparation
Mix Bowl #1 together with a wisk. Mix Bowl #2 together with your hand to combine ingredients. Mix #2 into #1 with your hand, gently folding until you have a soft, sticky dough. Let rest in refrigerator at least an hour. Fry tablespoon size lumps of dough until well browned, about 4-5 minutes, making sure they all turn over. Drain briefly, and while hot, toss with powdered sugar until coated. Eat!
