Ingredients

2 oz vodka

2 oz ginger syrup (recipe below)

3-6 fresh mint leaves

1/2 lime, juiced (about 1 oz)

for Ginger Syrup

4 cups water

small piece of fresh ginger (about 4" long), peeled and sliced into coins

2 cups sugar (or granulated Splenda)

Preparation

To a martini shaker, add the vodka, ginger syrup, mint and lime juice. Shake and serve in a chilled martini glass

To make ginger syrup: In a small saucepan add the water, ginger and sugar. Stir to combine and bring to a boil. Continue to heat on simmer to make a simple syrup, about 20 minutes. When ready, remove from heat, strain and transfer to a glass container and allow to cool to room temperature.
