Ingredients

1 tablespoon olive oil

3 cloves garlic, minced

1/2 cup yellow onion, minced

3 large tomatoes, seeded and diced

1 cup red cooking wine

5 oz. canned tomato sauce

4 leaves fresh basil, chopped

juice of 1/2 lemon

optional: 5 oz. fresh baby spinach (half bag)

Preparation

  1. In a medium pot, saute onion in olive oil over medium-high heat until softened, about 4 minutes.
  2. Add garlic and continue to saute, stirring about 1 minute (do not brown garlic).
  3. Add wine and lemon juice, lower heat to medium and simmer for 3 minutes, stirring ocassionally.
  4. Add tomatoes, tomato sauce, basil and spinach. Stir and cook on low for a few minutes until spinach is wilted.
