Ingredients

-2 large bone in chicken breast

-1/2 white onion quartered and thinly sliced

-1/2 cup chicken broth

-5 cloves garlic chopped

-2 small tomatoes quartered into fours

-2 tablespoons tomato paste

-2 tablespoons chopped parsley

-2 tablespoons olive oil

-1 pad butter

-1 pinch red chili flake

-salt

-ground black pepper

Preparation

-Preheat oven to 350 degrees.

  1. Cut your chicken breast in half, making four pieces. Season both sides of the chicken in a pinch of salt and pepper.

  2. In a heavy skillet, add olive oil, butter, onions, a pinch of salt, red chili flake and pepper on med/low heat. Stir for about 4 minutes, till onions are tender.

  3. Add tomato paste and mix with onions for a minute more.

  4. Add chicken breast, skin side down. On medium heat, rub the chicken with the tomato mixture in the skillet. Coating the chicken as it browns. 5 minutes for each side or till golden
