Ingredients

2 Tbsp. butter, melted

3 lg. eggs

1 1/4 c. milk

1 1/4 c. flour

1/2 t. salt

Preparation

  1. Preheat oven to 375. Pour the melted butter into 12 muffin tins.
  2. Beat together the eggs and milk in a medium bowl. Add the flour and salt, whisk until reasonably well blended. Lumps = OK.
  3. Divide equally among muffin cups and bake 30 minutes.
  4. Remove popovers from tin immediately, using a fork to poke them.
