Ingredients

2 eggs

1 cup flour

1/4 tsp salt

3/4 cup milk

Preparation

Heat oven to 450F. Beat eggs well. Add salt to flour, then add to eggs and stir in milk. Whisk well until smooth. Add a small amount of roast drippings to all holes in a muffin tin. Heat the drippings in the oven until hot. Carefully remove the tin from the oven and pour in the batter, filling 3/4 full. Return to the oven and cook 10-15 minutes, or until puddings have puffed and risen.
