Ingredients

3 cups plain yogurt

2 tablespoons olive oil

2 garlic cloves, peeled

1 2-inch piece of ginger, minced

1 jalapeno, chopped

1/2 teaspoon ground coriander

1/2 teaspoon ground cumin

Juice 2 limes

2 teaspoons chopped cilantro

2 teaspoons chopped parsley

Salt and pepper

Preparation

  1. Strain yogurt through cheesecloth overnight.
  2. Heat oil - Saute garlic, ginger, and jalapeno for about 5 minutes.
  3. Add coriander and cumin
  4. Cool and blend with lime juice and yogurt until smooth.
  5. Fold in cilantro and parsley; season with salt and pepper
