Ingredients
3 cups plain yogurt
2 tablespoons olive oil
2 garlic cloves, peeled
1 2-inch piece of ginger, minced
1 jalapeno, chopped
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
Juice 2 limes
2 teaspoons chopped cilantro
2 teaspoons chopped parsley
Salt and pepper
Preparation
- Strain yogurt through cheesecloth overnight.
- Heat oil - Saute garlic, ginger, and jalapeno for about 5 minutes.
- Add coriander and cumin
- Cool and blend with lime juice and yogurt until smooth.
- Fold in cilantro and parsley; season with salt and pepper
