Ingredients
2 large cucumbers
4 cups plain yogurt
4 scallions with tops, trimmed, thinly sliced
1/4 cup fresh lemon juice
2 teaspoons salt
freshly ground white pepper
Preparation
Pare cucumbers, cut in half lenghtwise, scoop out seeds with small spoon or melon baller, discard. Cut cucumbers into 1/4 inch dices, you should have about 4 cups.
Combine cucumbers, yogurt, scallions, lemon juice salt and pepper and refrigerate until ready to use.
