Ingredients
2 large cucumbers
4 cups plain yogurt
4 scallions with tops trimmed and thinly sliced
1/4 cup fresh lemon juice
2 teaspoons salt
freshly ground white pepper
Preparation
Pare cucumbers, cut in half lengthwise. Scoop out seeds with small spoon or melon baller discard. Cut cucumbers into 1/4 inch dice you should have about 4 cups. Combine cucumbers yogurt scallions lemon juice slat and pepper. Refrigerate and serve.
