Ingredients

4 medium onions1 cup butter12 tablespoons flour4 cups beef stock4-6 cups cooked beef 2 eggs, Unseasoned Bread Crumbs

Beef Stock: 2-3 lbs round beef cut in small cubes Water to cover, Salt, Pepper & Oregano to taste. Add beef boullion cubes as necessary to have a full flavored stock

Preparation

Saute onions in butter until golden.  Add flour and cook over low heat, stirring constantly until smooth and lightly browned.  Remove from heat, gradually stir in beef stock.  Cook and stir until very thick.  Cool and stir in shredded cooked beef…there should be no chunks. Form croquettes into 2 " balls and roll first in wisked eggs and then in bread crumbs to cover. Fry in medium hot oil until croquette is heated through and browned. Serve croquettes with spicy mustard. Croquettes can be packaged and frozen.

Beef Stock:  cook 4 hours over low heat until meat is very tender and falls apart(stock and beef are used in main recipe)
