Ingredients
1 can reduced sodium chicken broth
3/4 c water
1 box yellow rice mix
1 tbsp extra virgin olive oil
1 c diced plum tomato
1 1/2 tbsp fresh oregano
Preparation
In a 2-quart microwave safe bowl, combine chicken broth, water, yellow rice mix and 1 tbsp extra-virgin olive oil. Cover with waxed paper, microwave on high 5 minutes, and stir. Reduce power to medium. Continue to microwave 18 minutes, stirring once or until most of the broth is absorbed. Remove from microwave stir in 1cup diced plum tomatoes and 1 1/2 tbsp chopped fresh oregano. Let stand 5 minutes and fluff with fork before serving.
