Ingredients

olive oil

3 cloves garlic, crushed

3 cups rice

6 c vegetable broth

1 tsp turmeric

1 bunch cilantro, chopped

1 jar capers

1 jar stuffed green olives

(frozen corn or additional vegetables as desired)

fresh lime slices or wedges for garnish (optional)

Preparation

Saute garlic in olive oil. Add rice and brown slightly. Add turmeric and vegetable broth. Bring to a boil. Reduce heat and simmer 20-30 minutes until rice is tender.

Toss rice with remaining ingredients in a large bowl. Garnish with fresh limes if desired
