Ingredients
One 10 ounce package Vigo yellow rice
4 tablespoons olive oil
1 cup yellow onion, chopped
6 cloves garlic, minced
1 medium cubanelle pepper, chopped
Pinch of saffaron
6 ounce can of sweat peas, drained
1 cup fresh cilantro, chopped
Preparation
Cook rice per instructions on package, set aside Heat 2 tablespoons of olive oil over medium heat in a medium saucepan Add 4 cloves minced garlic - heat for 30 seconds, careful not to burn Add onion and pepper - saute for about 5 minutes, stirring occassionally Add saffaron, stir, remove from heat Add garlic, onion, pepper mix to fully cooked yellow rice Add peas, stir well Add cilantro and remaining 2 tablespoons of minced garlic Stir well and serve
