Ingredients
3/4 oz sugar
8 fl oz water
3 oz tomatillos quartered
1 fl oz lime juice
salt as needed
1 fl oz olive oil
12 oz sliced onions
1 tsp sliced garlic
1 1/2 lbs yellow peppers
5 oz chopped fennel
1 stick cinnamon
1/4 tsp allspice
1 1/2 tsp epazote(mex mkt)
Preparation
heat oil,sweat onions and garlic. add fennel cinnamon allspice epazote sugar and water cover and simmer 25 min until soft blend and puree with tomatillo smooth and strain,season with salt and lime juice
