Ingredients
1/2 cup plus 2 teaspoons vegetable oil.
2 eggs.
2 1/2 cups milk.
2 cups yellow cornmeal.
2 cups flour.
2 teaspoons baking powder.
2 teaspoons baking soda.
1 teaspoon salt.
Preparation
- Preheat the oven to 425 degrees.
- Whisk together 2/3 cup of the oil and the eggs until frothy. Stir in the milk.
- Sift together the dry ingredients and stir them into the egg mixture, mixing until just combined.
- Coat the bottom of a 10-inch cast-iron skillet with the remaining oil and heat until very hot. Pour the batter into the skillet and remove from the heat. Bake for 25 to 30 minutes. Cut into wedges and serve.
