Ingredients

4 - 5 lb pot roast

5 lb bag of carrots or

pre-peeled carrots if you prefer

very large onion or 2 smaller ones

5 or 6 medium potatoes peeled and cut into large pieces

one package of Lipton Beefy Onion Soup Mix

2 cans of Cream of Mushroom soup

Preparation

  1. Line large deep glass or metal baking pan with heavy duty tinfoil (enough to cover and seal the top when all ingredients are placed inside foil)
  2. Place potroast in center of foil
  3. Arrange potatoes, carrots and onions evenly around outside edges of roast
  4. Sprinkle soup mix over all
  5. Spoon both cans of mushroom soup over roast in center
  6. Seal foil tightly so there are no leaks (this makes clean up easy too as well as sealing in juices for a fantastic gravy that makes itself while it cooks)
  7. Cook on 350 oven for about 3 to 3 and 1/2 hours 8***Do not open foil while cooking as this will make for a drier roast and less gravy, be patient
  8. Take out of oven and serve.

Experiment with different spices as well once you’ve tried the original, it’s great with parsley, garlic powder and other spices that go well with beef. Mange and enjoy!
