Ingredients
2 lb. yams, cooked and beaten
Add:
1/4 C. butter, softened
1/2 tsp. sat
1/4 tsp. cinnamon
1/4 tsp. nutmeg
2 eggs
1 tsp vanilla
1/2 C. white sugar
Top:
3/4 C. brown sugar
3 T. flour
1/4 C. butter, soft
1/2 C. pecans, chopped
Preparation
Cook yams and beat with mixer. Add melted butter, salt, cinnamon and nutmeg. Then add eggs, slightly beaten, 1/2 C. sugar and 1 tsp. vanilla. Place in 2 quart casserole dish. In a small bowl mix brown sugar, flour, softened butter and chopped pecans. Spread on top of yam mixture. Bake iln 350 degree 35-40 min.
